Biting the ham that feeds me

by Jenise » Fri Jan 01, 2010 4:03 pm

Okay, so I've made 2 pots of black eyed peas w/ham, one risotto, three breakfasts for two, one breakfast for seven, deviled ham sandwiches, and nibbled at least as much as all that in cold snacks, and I *still* have half a pig in the fridge. It just won't go away!

I feel your pain, sistah. I bought a "honey-baked" knock-off from Costco thinking there would be some occasion during the holidays to make it/serve it. Well, there was no such appropriate occasion and it was rapidly approaching it's sell-by date (although, I would think the shelf-life on this this is actually longer than it indicated.) Len declared that he doesn't like spiral sliced hams, and especially not the glazed kind. Ten years together and who knew? Lord knows how long this thing will be hanging around as I slowly widdle it down once slice at a time!
Actually, I've sort of been craving a white bean soup. Anyone have a good recipe?

Hahaha...I know how you feel, and we only bought a tiny shoulder this year! Apart from sandwiches, I've also made fried rice, fried Chinese noodles, pasta soup and macaroni ham and cheese. It IS delicious though, and the boys are on school holidays, so I'm optimistic about getting through ours. Does anyone remember the good ol' days of ham steaks with tinned pineapple slices on top? :)

Happy New Year everyone!

Cheers, Celia

My Dad used to make that. He loved it. I can see eating it, for sentimental value. (And, for salt content!)

Speaking of pineapple rings, I saw a breakfast dish the other day called "pineapple upside down pancakes", which was exactly what you'd think it would be. Clever idea, I thought, and you could do it with fresh fruit.

No one mentioned "freezing". I brought home a large amount of spiral ham from a family dinner. My son cut off some nice sections for me and I put it into several Food Saver bags. So far, I've made a veggie/ham soup, omelet, ham sandwiches, and that was just from one package. I look forward to having this to fall back on this winter.

Think I will do that today, and then use the bone for a bean soup of some sort. Thanks for the reminder, Karen.

It's finally GONE: just went into the pot with the leftover turkey bones from Sunday's dinner.

Hey, mine's gone too! The bone went into today's batch of baked beans...
