RCP: Chex Party Mix (my version)

by Linda R. (NC) » Thu Dec 17, 2009 4:13 pm

Here is my version of this popular treat.

Chex Party Mix

3 cups Corn Chex
3 cups Rice Chex
3 cups Wheat Chex
1 cup mixed nuts (cashews & pecans)
1 cup Goldfish (orignial cheddar)
1 cup Honey Nut Cheerios
6 tablespoons butter
2 tablespoons French's Worcestershire sauce
3/4 teaspoons garlic powder
1 1/2 teaspoons seasoned salt (I use Emeril's recipe and make my own)
1/2 teaspoon onion powder

I mix the cereals, nuts and goldfish together in a large bowl, and melt the butter with the worcestershire sauce and seasonings in the microwave. Mix thoroughly, and place in baking pan, and bake at 250 degrees for one hour, stirring every 15 minutes. Spread on paper towels to cool. This makes one gallon-size ziplock bag full.

Can you tell what I've been doing today?

It's been around forever, but I have to admit I love this stuff. Oh, and I pick out all the Chex first.

Here's one that I found and tweaked slightly when I first started taking bridge lessons. (What a dork, eh?)
It's got the sweet, spicy, salty thing going on.

Caramel Snack Mix
INGREDIENTS:
1 cup butter, salted
1 1/2 cups white corn syrup
2 cups packed brown sugar
1/8 tsp garlic powder
1/8 tsp cayenne pepper
1 1/2 cup pecan halves
1 1/2 cup whole raw almonds with skins
2 cups mini twisted pretzels
1 (12 ounce) package crispy corn and rice cereal (Crispix)

DIRECTIONS:
1.Preheat oven to 275 degrees F (135 degrees C). Spray a large roasting pan with non-stick cooking spray.
2.In a medium-size microwave safe bowl, mix butter, white corn syrup and brown sugar and spices. Place the
mixture in the microwave and cook 2 minutes, or until butter melts.
3.Place the cereal, pecans and almonds into the prepared roasting pan. Pour the melted butter mixture over the cereal and nuts and mix gently until the cereal and nuts are coated.
4.Bake for 1 hour, stirring every 15 minutes.
5.As the snack mix is cooling, be sure to continue to stir so that the mix will not harden in one big lump.
