Need RCP for Jerusalem Artichoke Flan

by Clint Hall » Sun Nov 08, 2009 2:26 am

At a ten-course dinner last night at a tenth anniversary dinner in a local restaurant one of the courses was a Jerusalem artichoke flan topped with fresh salmon eggs. My wife and I would like to duplicate it but don't have a recipe for Jerusalem Artichoke Flan. Does anyone know of one?

Clint -

Not sure if this is what you're looking for, but this recipe on Epicurious includes Jerusalem artichoke flan. Would this be close?

Mike, at your Epicurious link I see ten flan recipes but can't find one for Jerusalem artichoke flan. Am I missing something?

I'm sorry, Clint- I dashed that off in a hurry. It's a celery root flan that I thought might be a good start. I thought the link went directly to the recipe, but it didn't. Look for the sauteed turbot with celery root flan (if you haven't already checked it out).
