Ideas for savory apple salad ?

A local farmer gifted me with a grocery bag of apples- all Red Delicious. I would not intentionally buy this variety because they are so common but these are perfect, deep red, totally crisp and not overly sweet. Do you have any ideas for their use in a savory dinner salad ?
Something with curry perhaps ? Fennel ?

Perhaps peeled, cut in bite-sized wedges and served with endive, walnuts and blue cheese in a lemon based vinaigrette?

Funny you should mention this as I made a Tart Tatin today, which whilst a dessert, isn't excessively sweet and seems (at least with the recipe I used) to emphasise the butter in the (savoury) pastry as much as the sugar on the apples. I did cheat though as we had various apples (and a pear) that needed to be used up so it's a layered affair of pear and 3 layers different apples :oops:

I'd also echo the thoughts of cheeses + apple which is often a supper snack for us

Fennel makes sense, but in reality apple can be mixed easily with salads (e.g. cheese, walnut, apple, grated carrot, sultanas, ...).

Our favorite salad (we call it THE salad) is essentially mixed greens and apple slices topped with caramelized onions topped with goat cheese rounds coated with toasted nuts and sauteed in butter. The onions are caramelized in the oven after being tossed with olive oil and red wine vinegar.

We had this at a friends home and it was delicious.

Fall Salad

shredded cabbage
shredded carrots
chopped scallions
chopped apple
dried cranberries
pecans

Dressing was Good Seasons Italian Dry mix made with red wine vinegar and canola oil. If you don't like packaged mixes, I'm sure you could come up with one on the savory side. The combination of the ingredients was really nice and very eye appealing.

Bake simply and serve next to (or under) duck or game. The natural sweetness shows well with these meats.

Spontaneous thought: make chutney.

Chutney indeed and I did - kept the apples with some texture. Served with a Tamworth pork roast and Marina di Chioggia squash. Very nice combo
