Yesterday, while running errands and shopping, I went to the local Farmers Market and ran across an offer I couldn't refuse. A large basket of fresh peaches, marked as "seconds" for $2.00 from a local grower. Some of them were a bit beat up. A few were good enough to set aside for eating. I peeled and de-pitted the rest of them, separating them into two groups. The first group had good, ripe fruit, which I sliced up and made into 4 peach pies, 3 of which I put in zip lock bags and froze, the other will be baked for tonight's dessert. The second group had some over-ripe and slightly bruised spots, so I chopped them up very fine and mixed them with a simple syrup and heated them up. After cooling overnight, I used this mixture as a substitute for the pineapple in Pineapple Muffin recipe posted by Jenise a while ago: http://www.wineloverspage.com/forum/village/viewtopic.php?f=5&t=14715. I doubled the recipe and had enough for12 muffins, a flan cake and a small tube cake. I still have enough of the peach mixture for another double batch. I could freeze it for future use, but I'm thinking it might be a good topping with ice cream on top of the flan cake. They just came out of the oven. Major Yum.

Great thinking Howie, wish I were close enough to sample the rewards. I usually go to the FM later in the day and often can buy a box of "canning" tomatoes for pennies on the dollar. These tomatoes are the ones with a small bruise on them and must be used the day of purchase, but they make great tomato sauce that can then be used for various purposes, not the least is spaghetti sauce. I bet one could cook them down and make preserves from them by adding a bit of sugar and perhaps some pectin. I bet that would go well on fresh hot buttermilk biscuits.
