RCP: Interesting breakfast today

I cooked some steel-cut oatmeal and bacon and prepared two NM dishes. Interesting combination but quite tasty.

Chocolate Turtle B&B, Corrales, NM
Green Chile Baked Eggs with White Sauce

3 Tbs butter
2 Tbs flour
1/4 tsp salt
1/8 tsp black pepper
1-2 Tbs chopped green chile (roasted and peeled)
1 cup milk
4 eggs
1/4 cup mozzarella cheese, shredded (I used cheddar)
2 Tbs onion, chopped

Melt butter in pan over med heat. Add green chile and onion and saute. Add flour and cook until mixture follows spoon around pan. Slowly add milk, then bring to boil and stir until thickened. Remove from heat.

Preheat oven to 325F. Grease 4 small baking cups. Spoon 1-2 Tbs white sauce into each cup, then break 1 egg into each cup and spoon white sauce over. Bake for 20 min. Remove, sprinkle w/cheese.

Red Chile Chips

Flour tortillas
Oil spray
Ground red chile

Preheat oven to 400F.

Set 4 tortillas on a baking sheet. Spray with oil spray. Very lightly sprinkle red chile over.

Bake 3-5 min or until crispy. Remove, cut into wedges. (Not bad with a little honey on the top when eating)

A recipe like that makes me wish I liked eggs, Larry. Great idea though, I often have to cook breakfast for guests so I'll keep it in mind.
