RCP: Chinese spare ribs

Another for Salil--my friend Annabelle made these from a Ken Hom recipe.

Ingredients:

1 rack of ribs
2 T thin soy sauce
2 T Shaoxing wine or dry sherry (or Scotch)
2 T sugar
1 T minced garlic
1 T brown bean sauce
1 T hoisin sauce
1 T red bean curd (comes in a jar, chunks of fermented bean curd in a red sauce, you scoop a little of the curd and sauce)
1 t five-spice powder

basting liquid: 3 T honey mixed with 3 T boiling water

Rub marinade onto ribs, wrap and refrigerate overnight. Next day, bake at around 350 for about 90 minutes, basting frequently with the diluted honey mixture. Allow to cool, then slice into riblets. Re-warm for service.
