Looking for a Mexican salsa recipe

A friend gave me a bag of fresh Anaheim peppers yesterday and I am going to make salsa. So, today I got about 7 lbs of very ripe tomatoes along with a couple heads of garlic, some limes, and a couple large sweet onions, and some cilantro. Will this list of ingredients make a good salsa for dipping? Anyone who has a recipe please post. Otherwise I will wing it on my own. Thanks in advance. Larry Greenly, speak up!

Bob, you've got the makings of several good salsas there. You can do a salsa verde out of roasted green chiles (being sure to include some of the blackened skin in your salsa for more flavor and attractive flecking) whizzed to a coarse but spoonable texture in a blender along with a couple slices of white onion, pan seared to sweeten, the juice of 2-3 limes, 2-4 garlic cloves, and a big handful of that cilantro. Season with a teaspoon of sugar to heighten the lime flavor and salt to taste. Or, make a pico de gallo using chopped tomatoes, chopped onion, chopped cilantro and finely diced chiles seasoned with lime juice, salt and pepper. Or, do a roasted tomato salsa: puree roasted green chiles, onion slices seared off, tomato halves seared off, a roasted red bell pepper if you have one, garlic, salt and lime juice, then add chopped cilantro and red chile pepper flakes.

Thanks Jenise, I have enough of toms and peppers to make more than one kind. Will roast some and do unroasted too. I would think that an unroasted one with a rough chop on the tomatoes and whiz the peppers, onion, garlic and cilantro, might add a pinch or oregano and or cumin too. will probably post on what results

My old friend, Spencer who owns Mama's Royal Cafe in Cabo San Lucas has a bunch of them on this page, Bob.

Funny, this came up today because he just today sent me a decades old picture of him and his buds in Pat O'Brien's in New Orleans. Some of you may recognize the guy on the far left. Spencer is on the far right. No, he's not a gay cowboy.

Thanks Chef,

I have added this to my salsa file and will give it a try. Truth be told though I like my salsa a little chunky but not so chunky a spoon is needed. I would have never have taken your friend for a gay cowboy! :D

Here's a great salsa fresco recipe that you can modify to fit the ingredients you have on hand. I'll look up some more and post them a little later today (I have some good authentic recipes).

4 med tomatoes, peeled and finely chopped
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup finely chopped green pepper
1/4 cup olive oil or salad oil
2-3 TBS finely chopped green chile (this is a ridiculously low amount)
2 TBS red wine vinegar
1 tsp mustard seed
1 tsp crushed coriander seed
1 tsp salt
dash pepper.

Combine everything. Chill several hours or overnight.

Obviously, you can up the green chile content and add some cilantro. If you don't have a bell pepper, this is something that you don't really need. But this is a very tasty recipe.

Chimayo's Ralph Sena's Pico Real Salsa:

Pico Real

20 large NM green chiles, roasted, peeled and seeded, chopped
6 fresh jalapenos, seeded and deveined, diced fine
1 large red onion, diced
6 cloves garlic, through a garlic press
1/2 cup fresh cilantro, chopped
1/4 cup fresh oregano, minced
4 medium fresh tomatoes, peeled and diced

Mix together. Salt to taste.

Dixon's Stanley and Rose Mary Crawford's Farmer's Market Salsa:

1 blenderful ripe tomatoes
1 medium sweet onion
3 cloves of garlic
6 fresh basil leaves
Pinch of oregano
3 green chiles, seeded
3 roasted green chiles, seeded and peeled
Pinch of paprika
1 tsp parsley
8-10 drops of red wine vinegar
s&p

Blend tomatoes, onions and chopped garlic with basil. Add oregano, salt and pepper. Boil mixture 10 minutes, until it thickens. Add and stir chopped fresh green chiles, leaving a few seeds. Cook 5 minutes. Add chopped roasted chiles and paprika. Taste for seasoning. Just before removing from stove, add finely chopped parsley and wine vinegar.
