RCP: Lemon Salad

Adapted from a recipe found on the recipezaar.com website ...

This unusual salad originates from the Hurdes region in Extremadura Spain ... it was originally served to fieldworkers at midday to regather their strength through the high portions of vitamins and proteins ... it is sour, sweet, and spicy all rolled into one ...

1 Whole fresh lemon, peeled, albedo removed, very thinly sliced, pits removed
1 Whole fresh orange, peeled, albedo removed, very thinly sliced, pits removed
3 oz. Spanish Chorizo sausage, thinly sliced
2 Fresh garlic cloves, crushed
2 Eggs
Olive oil
Salt
dash Red wine

Layer the lemon and orange slices in a nonreactive bowl ... place the crushed garlic and chorizo on top of the fruit ...fry the two eggs sunny side up leaving the yolks soft and place on top of the citrus slices, chorizo, and garlic ... drizzle olive oil over the top and add salt to taste ... to serve, cut everything up in the bowl so that the egg yolk mixes with the citrus juices and olive oil to make up a dressing ... drizzle the red wine over the top ... serve at room temperature ...

2 Servings

Serve with crusty bread and your favorite red wine ...

Nope ... still here in Yuma ... bought a vacation home/semi-retirement home/retirement home in the Morro Bay area (actually Los Osos) in April 2008 ... spent a good part of this Summer there before we had to come back to Yuma to get another lemon season underway ...

Have you ever tried such salads with a bit of Moroccan style pickled lemon added. Can be truly exquisite.
