Chanterelles Arrive!

It has been hot as Hades around here for the last couple of months (first rain in the last couple of days) and I hadn't expected much in the way of early 'shrooms to pop up, but was very pleasantly surprised to see the first chanterelles show up last week.

I lept on them like a sailor back in port after a long voyage leaps on....well, never mind, let's say I quickly negotiated the purchase of a kilo for $30 and they are clean, mostly quite small, and very tasty.

We have been using them in omellettes, I made a mushroom tart (great with Pinto Noir) and I intend to make my Mushroom Ambrosia tonight (a mushroom infusion of whipping cream that is positively decadent).

Rolling in 'shrooms and we are both loving it!!

Chantrelles are de-lovely. Of that there is no debate. Lovely enough in fact that I will go hunting for them in the woods when they grow wild. Alas, in Israel, the mushrooms come out only after the rains start and that is usually in late-November or early December. For the rest, smuggled back through customs on return trips from France.

Rumor has it by the way that black truffles have been found in parts of the forests near Jerusalem. Have no fear...I shall be checking that out. So far the only truffles in Israel are the white Negev desert mushrooms and the best that I can say for those is that champignons are better.
