Another food pairing question

You all have been great in the past with all my question Here is another.
We will be having a tasting in a few weeks with a few neat wines. I would enjoy any feed back on me selections. None of them are firmed up yet.


Food Wine
Antipasti dei mani Carnernos Brut
An assortment of food to take and eat by the hand
Prosciutto & pears and mint 2007 Gruner Veltner
Bosc pears sugared and sauteed in butter. Tossed with fresh mint and dressed with 600 day old Prosciutto
Artichoke bottoms stuffed with whole lump crab Sancerre
Fresh Artichoke bottoms Stuffed with fresh lump crab dressed with a lemon dressing

Seared scallops w/ Chardonnay veal reduction 2006 MarguxPavillion Blanc
Seared Jumbo Sea Scallops with a Chardonnay veal demi
Lentil soup with ham Pavillion Blanc
Drizzled with Extra Virgin Sicilian Olive Oil
Linguine con Pomodoro e Balsamico Pavillion Blanc

Wow!! When do I show up?

Seriously, it looks like a great meal. For whatever reason, the pear/prosciutto dish sounds like a good match for an off-dry Prosecco to me (or maybe a Moscato or some other lighter, off-dry wine). Might be wrong there, though. Also, the linguine just sounds like a tough wine match no matter what. Don't think I could do better than what you've picked, though.
