Ambrosia

by Larry Greenly » Wed Aug 05, 2009 12:46 am

I made green chile stew today from some pork ribs I grilled yesterday. Green chile stew with some flour tortillas is one of the greatest culinary delights in the whole universe. I could and have eaten it for breakfast. It's great for a hangover remedy. It's good any time. What's your fave?

It is indeed!

We have been shopping at Central Market here in Austin and they make fantastic flour tortillas in store. We usually get them while they are still warm. The hard part is trying not to eat them all in the car on the way home!

One of my favorite meals. I include tomatillos in my chile verde. I understand a lot of New Mexicans don't.

I don't, but I'd be willing to try them. I sometimes put untraditional items in my green chile stew, such as corn.

Years ago, an SOB of Hispanic extraction berated me up and down for putting corn in green chile stew for a potluck. My opinion is that corn grew for centuries in Mexico. And I can't believe Mexicans were too stupid to ever try throwing in something they grow. Gee, maybe I had invented something no one had ever thought of before. Duh.

Love chili verde. Made it for years in a manner that copied what a Mexican secretary of mine once made. Rich, gravy-like, and with black flecks of char floating about--she only removed the big hunks but let a lot of the black in. I do that, too. Then I went to New Mexico where the chili was runnier, free of the charred bits and usually had tomatillos in it. Loved that too, but it was more something to eat over rice. With a tortilla? Give me Lupe's.

North or South store? But La Fonda San Miguel has better.

Nopalitos are interesting to add to Chili Verde.

Er...... I don't know if it's the north or south store. Probably north. Right next door to the Heart Hospital.

Now we'll have to check out La Fonda San Miguel. We've only gone to a few restaurants here so far. Mexican type joints that we've been to are Chuy's and Zocalo Cafe. (Which we just came home from 5 minutes ago.)

Thanks, Bob. Good to be back around the boards.

Cynthia, Chuy's is kind of like the McDonalds of Tex Mex around here; the same everytime you go (I haven't been there in probably 17 years). La Fonda San Miguel is pretty upscale but is an Austin institution. They just got a new exec chef, Alma Alcocer-Thomas, who is formerly of Jeffery's (another Austin institution). I don't think that she has put her signature on the menu just yet but she is very good. La Fonda has a Sunday brunch that is nice the first time but I find it highly overrated.

El Borrego D'Oro, if it is still open, just plain rocks. At least, it did last time I went there.

There is also a good Indian vegetarian restaurant called Swad up north at Rundberg and Lamar.

And the Central Market you are shopping is the north store...the original store. Are y'all living here or just visiting?

We relocated to Austin in mid-June. Still finding our way around and sorting out the chaff.

Thanks for the tips!

They got tired of the cold in Montana, and overcompensated a bit.

A bit? "Hey, I have a great idea! Let's move to Austin during one of the hottest, driest summers on record." Deep Eddy is my best friend these days.
