Recipe Report - Ted Richards' Chilled Avocado Soup

by Dave R » Sun Jul 19, 2009 2:40 pm

For a dinner party last night I made a version of Ted Richards’ Chilled Avocado Soup that he posted on FLDG last month. In a word, excellent! I did make a few minor changes (yeah Karen No/Cal, I know :) ) but the base was still Ted’s great soup. I don’t use garlic powder as the recipe called for, so I used some roasted fresh garlic. And quite a bit. Instead of Tabasco I used just a hint of homemade hot sauce (we really could not even taste it). After the soup was put into the bowls for serving I put a very small drizzle of hazelnut oil on top along with some fresh cilantro. It was a huge success and thanks to you Ted for the base recipe.

I love your tweaks, the fresh roasted garlic and drizzle of hazelnut and cilantro sound perfect.
