Jam Making Primer

I've just written a jam making primer which I'm really proud of - I hope you'll have a look. It's all the things we've learnt from a year of obsessive jam making and most of it is stuff we haven't read anywhere else, and have had to learn from trial and error.

Off to the markets today, let's see what's out there! There's not usually a lot mid-winter, but it's always a nice day out.

there is a very lovely jam book written by Laurent Dutheil. it is in both french and english. he and his family own Hotel Diderot in Chinon; and there they serve at least 25 different jams that he personally makes from local fruit. they are terrific. i think it is called 'jams in the cupboard' or something like that. i found it listed at amazon once; but no copies were available. ps. it is a wonderful and inexpensive hotel.

I've always been a little intimidated to make jam. But I think I'll give it a try.
