Picked up a couple of Snake River Farms "American Wagyu Beef" ribeyes the other day and grilled them with just salt and pepper. I paid $13.99 per pound, which seemed reasonable since the sign said "Save $20 per pound". They were odd looking ribeyes, in that it appeared to be only the very center portion - the eye of the ribeye, without the ring of fat and meat that usually surrounds it. They were the most marbled steaks I have ever seen - more so than even dry aged prime.
They were absolutely phenomenal. Juicy, well-flavored, and incredibly tender.
The butcher at Metropolitan Market said that they were getting it because the company's restaurant business is off and they need an outlet for the excess. I've hard the same from winemakers.
Anyone else ever have it?
