Nougat Candy Recipe help

My husband and I just came back from a few days at the beach. We stayed at the wonderful Stephanie Inn in Cannon Beach, Oregon. At one of the dinners, the chef served a delicious nougat candy treat with her dessert course. It reminded me of my childhood days eating the "Big Hunk" candy bar. This nougat was not as hard as the original candy bars, but somewhat stickly. It was so good! I tried, but I couldn't get the recipe from the kitchen staff.

I been searching the internet and have found several recipes that sounds good, but they are an unknown. I am hoping that someone will have a "tried and true" recipe that I can make as I am hungry for more of this nougat candy treat.

I don't have any recipes for you, but perhaps you had torrone, an Italian nougat candy. It's something I always bring home for my Italian MIL; she prefers morbido, soft & chewy, over friable, which is not. Online recipes abound, with pistachios, hazel nuts, almonds, etc.

I bought back 2.2kg of artisanal torrone from a chocolate show in Florence this past January (show was in the Piazza Santa Croce). I assume it was good - as Gus (dog) got to it before anyone had a chance to carve off a chunk.

Linda, I've had torrone and Chris is right, that would get in the zone you're looking for (I'm a nougat fan, too).

Chris, how long does this "will eat anything" puppy phase last? Fruit, whole soaps--Oreo will eat a whole bag of tortilla chips and then devour the bag itself, but even he won't eat soap. :)

I don't know how long this scavenging stage will last with Gus. His 4th birthday is the 27th of this month and he's still going strong. We had bought a watermelon at the Green Barn yesterday and it was on the kitchen counter, pushed to the wall. This morning we made a quick trip to Costco and came back to find a bloated bellied dog and sticky slime on the kitchen floor. Yes, his largest target to date and all that was left was the bottom rind portion of the melon.

Countless times I have been sitting at this computer, typing away, and slowly sense the aroma of (green) tomatoes or lemon cukes in the air, only to find out that he's raided the garden and is licking his paws while lounging on the floor behind my chair. Scot has finally fenced the garden this year so Gus cannot help himself to the produce.

Of course not--IF I had a recipe to reccomend, which I do not. And, I thought Linda was suggesting someone volunteer to test a recipe.
