Excellent Potato Recipe

Very very funny blog, I enjoyed reading that. But YES re this killer potato method, which I actually learned of here on FLDG from Mike Filigenzi. My husband and I have dubbed them Splats. We usually use Yukon Golds and for just the two of us I'll usually do them on the stovetop but I love that for a larger group you can cook off a pile of them in the oven.

I didn't catch Mike's original post, but I am salivating helplessly after reading that blog. I must have those, and I must have them very soon!

And I don't think you could go wrong substituting butter for the olive oil.

Jill Dupleix is a genius with easy, clever, quirky recipes like that. I've been a big fan for ages - if you ever get to read anything written by her or her other half, Terry Durack, do so - great fun!

We tried this recipe yesterday evening. It was every bit as delicious as everyone has claimed. 'Nother addition to my permanent list.
