Oh...my...goodness...

David Lebovitz blogged about caramelised white chocolate and I made a batch last night. If you have any white choc at home - make some now!! It is astonishingly decadent, particularly if you're a caramel or white chocolate lover.

Here are photos of my batch - that's just white chocolate, nothing added, which has browned and caramelised in the oven.

Wow, that's an amazing concept. Which brand of white choc did you use?

I'm thinking of steamed bitter-chocolate sponge pudding, with caramelised white chocolate and thick cream ... Do I dare!?

When I was a kid, everyone's mum used to make caramel sauce by boiling a tin of Nestles Condensed Milk in a saucepan - or in the laundry copper. I was at my sister's house once when a tin of condensed milk getting this treatment exploded, flinging hot caramelised goo all over the floor, walls and ceiling.

Matilda, I used Callebaut callets, but David Lebovitz uses Valrhona. I think it would probably work fine with Lindt though..

I've just given half a jar to a friend who was over. It was the only way to stop the moaning once he'd tasted it.. :)

What you describe is known throughout Latin America as "dulce de leche," and is made at home in exactly the fashion you mention.

Nice job *C*! Now you just have to make some ice cream to put the caramelised white chocolate on for dessert.

Oh we've done more than that, Dave. :)

Pete made caramelised white chocolate icecream, and I found a way to temper the caramelised chocolate back into bars. Have a look here.
