Something Easy To Serve Next To Chicken Piccata

I haven't made this in while but I got the request for tonight. With kids everything is usually one course so I need something on the side. I usually just do a simple pasta ... but I know I am always scratching my head for the right match.

Thoughts?

I made chicken piccata a couple of weeks ago. I still had some asparagus in the yard so I made an asparagus and parm risotto. It worked very well.

Please let us know what you end up doing.

Hmmm... I usually do some asparagus but haven't done risotto. That sounds like killing 2 birds ... I like it. How do you prepare the asparagus? Just saute?

Blanch, roast or saute - That works. What I have also tried is cutting off the tips (set aside) and combining the soft part of the stems with some of the cooking liquid. Blend that up in a blender and stir in while making the risotto. Add tips to the risotto at the end.

My method too, otherwise you just end up with rice with asparagus in it. This method really infuses the asparagus flavor.

I'd probably do roasted potatoes. The kids love them, they're easy, and they're my basic default when I can't think of anything else. That asparagus risotto sounds more interesting, though.
