Oryx dinner

Last night we dined on oryx I prepared as a pot roast. Quite tasty. Taste is similar to beef or mild venison. There's virtually no fat, so there's a tendency toward dryness. But I didn't think about larding it until it was done (I coulda had a V-8!).

A friend just happened to slaughter their pet oryx? An exotic butcher opened up down at the mall...?

Not your normal weekly roast beast, for sure.

Oryx is hunted in southern New Mexico. Someone gave me a few cuts from one that was bagged.

Would that be the Scimitar Oryx? A breed that may be extinct in the wild?

A couple of friends opined last evening over a glass of venerable wine that one thought there was nothing quite so tasty as a nice bit of warthog, and the other had a yen for some coatimundi.

Ok, just what does one have to do to be able to hunt an Oryx? I expect to have plenty of wall space in my planned new home. :wink:
