Advice on tortellini accompaniment

by Christina Georgina » Wed May 13, 2009 12:18 pm

The dish : chilled cheese and spinach tortellini, served on skewers as part of a hefty antipasto platter.
Needed: some type of dip or condiment to serve with them.
Possibilities already considered: basil or parsley pesto
The rest of the antipasto platter: grilled/marinated artichoke hearts; marinated mushrooms; caprese on skewers; roasted red peppers; roasted asparagus.

Any suggestions keeping a Mediterranean emphasis and not repeating the other flavors ?

I'm not a fan of cold pasta dishes but I need something to fill out the options for buffet finger food. The main will be Italian sausage/pepper/onion sandwiches on crusty rolls w/wo tomato sauce

Thanks

Christina, I probably would just drizzle them with a little good olive oil and perhaps sprinkle a little parmesan cheese on them. Another good appetizer that wouldn't repeat any flavors would be white bean dip. Just saute a little shredded proscuitto or pancetta in a pan, add some fresh garlic, fresh rosemary and a can of canellini beans. Crush about half the beans, add a little more oil, salt and a few red pepper flakes. Serve with crostini or thin bread sticks.
Hello. My name is Carrie, and I...I....still like oaked Chardonnay. (Please don't judge.)

Sounds like something spicy might be a good addition. Nothing that would wipe out the flavor of the tortellini, but something with some zing to it. Maybe even some olive oil with crushed chilis in it?

Christina, there’s no need to throw out basil pesto—it’s a classic because it works. But if you add pulverized (mortar and pestle) black peppercorns to taste or maybe a step beyond, you’ll have a great appetizer! You’re serving this with Soave Classico, right?
