Hadn't planned on it. Rain washed out downtown Tulsa's festivities today. I never paid much attention to it anyway, what use is a holiday during a workday, anyway? :?

I had a blue corn tortilla with frijoles refritos and melted pepper jack cheese with scrambled egg-beaters and salsa for breakfast.

But I often have that for breakfast...

Louise asked about guacamole and Margaritas at supper time but I'm kind of dieting during the week, maybe we will make up a pitcher of Margaritas on the weekend.

Yesterday I served cheese and crackers to the students in my (small) honors class. I told them "I don't think my pet, Porky, sneeze on them..."

I'll say yes to that, Roberto. :)

No Cinco de Mayo here. But we did Quatro de Mayo and Tres de Mayo, since we were in southeast Washington where the Mexican food is unbelievably good and authentic.

Chef, that sounds very good. We have a local place that does wonderful carnitas. Their #'d list, though, is pretty typical "American Mexican" We had margaritas here, too.

Jenise, lucky you to have authentic Mex. so close by.

Larry, not so much a holiday as another reason to eat good Mexican food (and margaritas :wink: ).
