Speaking of throwing out food...Discolored Pastrami?

by Dave R » Thu Apr 30, 2009 12:41 pm

Last night I purchased some cold pastrami from the deli. When I was making a sandwich with it this morning I noticed that is had sort of an iridescent light green and pink metallic hue to it. It is almost like fish scales sometime appear. The meat does not smell and it is not the least bit slimy. Is this pastrami bad?

I've noticed that iridescent sheen on deli roast beef before. I'll eat it unless it smells off or is slimy, and have never noticed any ill effects from it.

I had that happen with some deli meat we brought into work for a lunch we had. We called the store and they said that it is from the blade on the cutter. It reacts with something in the meat. The meat is still good. We ate it and it was fine.

Thank you Robert and Patti. After reading your comments yesterday I ate the sandwich and am happy to report that I feel perfectly fine.

It's absolutely okay. The iridescent sheen is from a regular arrangement of microscopic fat globules shaped like spheres, which diffract light not unlike opals or a CD. If you heat the meat, the fat melts, the regular arrangement is destroyed and the sheen goes bye-bye.
