Need to fix something to take to a diabetic, help!

A friend of Gail's is undergoing chemo and radiation treatment for cancer, and hasn't been cooking. Her husband is diabetic and hasn't been eating right for a while, so she asked us to cook something for him tonight. I am somewhat clueless. Gail said low sugar, low carbs, so pasta is out. Gail suggested a soup. Maybe a beef-barley soup? Any suggestions would be appreciated.

If I were in your position, I would take over a beautiful roasted chicken, with a cold quinoa salad made with grape tomatoes, cucumber, orange bell pepper, green onion and a nice olive oil vinaigrette. Quinoa does not raise blood glucose and is tolerated by diabetics, I'm told. The chicken can be used for a salad or sandwhich the next day, along with the rest of the quinoa.

Karen has the right of it. And I'm speaking as a diabetic (albeit one with notoriously weak glycemic control :? ). Chana dal (Indian lentils) are good too.

Chicken, fresh salads, light on the cream sauces, and you should be fine.

... I like the idea of ensuring there is a second meal in the leftovers - good if someone is getting used to sorting out food and lacks confidence.

The soup is still a good idea - perhaps one to cook for yourself and accidentally make too much ("I wonder who might be able to eat the rest...?" :wink: )

Thanks for the suggestions! We decided on the quinoa salad, which I just finished making (after a quick trip to Whole Foods for the makings). I haven't roasted a chicken in ages, and there's a restaurant nearby that does a really good rotisserie chicken, so I ordered one up and we're about to head out.
