Knife Knowledge

by Jon Peterson » Tue Apr 21, 2009 2:58 pm

Is there a website that anyone here is familiar with that matches knives to their intended purpose and gives their correct names and descriptions? I certainly don't know all the possibilities but recently, I have seen so many knives being used in the wrong way. For example: tomato knives being used for slicing bread or for cutting up a chicken. My cookbooks seem less than adequate in this area.

Jon, I am not certain that this will answer your question(s), but it can be helpful. I have several of these knives, and have for a couple years now, and I still like them. Anyway, each knife gives a resume of it's uses so it might be of help. viewtopic.php?f=3&t=23754&p=203483&e=203483

Wüsthof's description isn't a bad place to start.

Learn how to use a a knife and you can use a 10-inch chef's knife for anything. (But, don't slice bread with it).

Thank you for the suggestions. A good knife is worth more than its weight in gold.
