Easter Dinner Menu?

Nothing fancy here. I'll be having the family over for a dinner of baked ham, asparagus, sweet potatoes and mashed potatoes. I think Riesling would work with this menu. Probably shrimp cocktail for an appetizer and since I hate pineapple on my ham, I may make Jenise's Pineapple muffins, baked in a tube pan for dessert. I've also been invited to a Dyngus Day party with friends at a local Polish restaurant on Monday. Who knows, maybe while one of the polka bands is playing, some lady will chase me with pussy willows.

Our kids have requested their favorite...filet butt roast with Bearnaise sauce, stuffed baked potatoes, spring asparagus, and some sort of green salad. Since I have a non-red meat eater in the group who asked me not to do any thing special for her, like chicken or fish, I am making a few other things she never had in her childhood,which she now loves, stuffed celery and deviled eggs! Dessert will be home made lemon bars with vanilla bean ice cream. When you have grown kids, you cook what they grew up with, because they ask you to. For the really fun stuff and much experimentation....that is what I do for Gene and I, and on occasion, dinner guests.

For some reason, this reminded me of a conversation with Gene a long time ago about bologna. He said he hated it, while I love bologna and mustard sandwiches. I never eat them anymore. :cry:
I bought some really good stuff at a deli, had the slices thick cut and fried it. Served it with fried eggs and he loved it. So did I.
I guess it was the ham that reminded me, and that you may try to BBQ the ham. It sounded great. Let us know how you like it.

I've heard that before, but it made me laugh again so I went looking for it's origins. Apparently it gained fame when Ms. Rombauer put it in one of the early editions of Joy of Cooking, but it's widely believed to have been something first said by the magnificent Dorothy Parker. Not hard to believe!

In no particular order...

Tzatziki with warm pita bread
Charcuterie and cheese

Spinach salad with peas, avocado, red pepper, feta and late harvest Riesling vinaigrette
Herb crusted rack of lamb
Ina Garten’s parmesan roasted broccoli
Some type of potato (I’m thinking about making roasted garlic mashed potatoes then blending in some bacon and chives. Spreading half of that in a casserole dish, putting a layer of cheese over that then covering with the rest of the potatoes and topping with more cheese then baking until golden brown on top).

Dessert is being brought by our guests
At least one bottle of the wine will be a Rochioli Estate Pinot Noir

We're not having any special meals at home with family or friends. Just the two of us. This evening, I made a casserole of chicken with prunes in red wine sauce. That should see us through Friday and Saturday. Sunday, we'll be out having a scratch meal with friends at the music club. Monday - who knows?

Because I'm on a Japanese Food kick, and we are having our vegetarian son and his girlfriend, I am planning to make Okonomiyaki, and maybe we will have a Quinoa-Cheese-Spinach casserole that we've made a few times. The menu is under development but that is where we are starting. For the meat eaters I am planning to sneak some bacon into the Okonomiyaki since it can be made according to individual tastes (as the name implies).

Does anyone else here make Okonomiyaki? If so perhaps I should make a separate thread and we can talk.

I changed my mind. Instead of ham, I'm going to make a crown roast of pork, with stuffing and home made applesauce.

We just got back from the Farmer's Market having figured out what we're bringing (we're going over to a friend's house for supper). We'll bring a tray of smoked fish and cheese, cold asparagus with lemon-caper vinaigrette, and a cake topped with malted-milk easter eggs.

Dinner was Lamb Bourgnignon, accompanied by 1996 Domaine Trapet Pere et Fils Chambertin, French bread, and a salad. In honor of the holiday, I used lamb instead of beef, and herbes de Provence instead of thyme for the seasoning. The lamb was perfectly tender and the whole dish went excellently with the grand cru Burgundy.

A little late:

For just the two of us, we had Roast chicken with a wine and broth reduction, braised fingerling potatoes with thyme and butter (these were fabulous - recipe to follow), asparagus with browned butter., and a 1991 Mondavi Pinot Noir.

Yep, six days and counting. :( I'll be here at least one more day, and will have to continue with IV antibiotics for another 1-2 weeks at home once I'm released. At least home will mean my own bed, recliner and kitchen! :D
