I thought some of you might enjoy this..

I recently made pectin and jelly from leftover apple cores and peels destined for the compost heap. The jelly is absolutely delicious (particularly with roast pork) and I'm feeling very chuffed with myself for being so frugal.. :) A friend even used it to glaze her hot cross buns!

I'm now obsessively saving all the apple cores from my son's morning teas and freezing them!

I would bet that is wonderful with pork loin or on top of English Muffins. Great job!

May I ask what "chuffed" means? Also, do you put spices in the jelly?

Dave, thanks! No spices in the jelly and it was fantastic with the pork. "Chuffed" is an English colloquialism, meaning "very pleased".

Love the name "Compost Jelly"! I also deeply admire what you call your frugality but which I'd deem efficiency because I know your goal is self-sufficiency and sustainability, not the pennies. You're a very cool lady.

Wow, thanks Jenise. That means a lot to me! Frugal isn't a dirty word, although it does have connotations of making Christmas presents from the leftover tubes from toilet rolls.

You'll laugh at this - I now have friends collecting apple cores in their freezers for me. I had to be clear - I only want cores from apples you've cut up, not from the ones you've eaten whole... :wink:

One of the local free "alternative" weeklies had an April Fools Day issue in which the "restaurant review" was a place serving only composted, rotting "organic" cuisine. Quite hilarious. :) Given the trendyness of Bay Area restaurant culture, I didn't realize it was a satire at first.

In case there was any doubt concerning the intent of my comment, all I meant is that, as a born and bred Yankee, I of course fully approve and applaud the frugality. Making pectin from fruit leavings otherwise destined for a compost heap--now THAT'S Yankee ingenuity! Ayup. :wink: :wink:

It's a nice feeling! We were able to do the same with a big bag of quinces we received last week - first we made quince jelly (had to use some of the compost pectin to set it, as the quinces were really ripe), then turned the flesh into quince paste (never again - that was such hard work!).

Larry, we now use cloth napkins and never iron them. If we had to iron them, we wouldn't use them - I'd never bother - so we decided to just wash them and throw them in the drawer. Now we get the paper napkins out only for guests.. :D
