What a neat morning. It's overcast with a soft, milky light instead of the usual bright sun and deep blue sky. The back door is open, and the air is comfortably cool with no wind. It feels like a spring day.
I made a hit with my favorite wife with a breakfast of shirred eggs and sausage. I used some small, rounded glass bowls that I bought for mis en place usage. One thing that struck me is that a single egg seemed like a lot more.
Here's my recipe:
Butter small bowls or ramekins.
Line with shredded parmesan.
Drop in an egg.
Salt and pepper and some grated nutmeg.
Dot top with a little butter.
More shredded parmesan on top.
(Optional: I added a small dollop of salsa on one side)
Bake in 325F oven 12-15 min.
