I recently re-acquired a cookie press. I used to have one that I used all the time, but it went missing in a move someplace sometime.
This is the first recipe I've created for it. They came out well, and with that perfect crispness one wants for a cookie to go with coffee.
1 1/4 cups butter at room temp
1 cup sugar
2/3 cup brown sugar
2 large eggs
1 tsp vanilla extract
2 1/2 cups flour
2/3 cup baking cocoa
1/2 tsp baking soda
2 tsp Vietnamese cinnamon
1 tsp smoked red savina powder or other hot pepper powder
1/2 tsp chile de arbol powder
1/4 tsp freshly ground black pepper
1/4 tsp chipotle powder
1/4 tsp allspice
Preheat oven to 375F.
Cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well. Sift flour, cocoa, baking soda and spices together. Add flour mixture to the mixing bowl slowly, making sure each addition is incorporated before adding more.
Place dough in cookie press tube with selected die. Press cookies onto an ungreased COOL cookie sheet. Bake for 10 minutes. Cool cookies on a rack.
Makes approximately 7 dozen pressed cookies.
