Too many cookbooks

While trying to find my favorite jambalaya recipe today, I became frustrated with the amount of cookbooks I've kept and accumulated over the last 47 years. While I have many I would never part with, there are many I have never used - not once.

I had a custom room divider made between the kitchen and family room to house the kitchen TV and all my cookbooks. I cleaned it out a few years ago, but it is overfilled, once again. So, I cleaned it out and have some nice cookbooks to donate to our local library bookstore. One that I came across is Frank Stitts, Southern Table. I had marked a recipe for Miss Verba's Pimento Cheese, presented on a plate with saltine cracker and stalks of celery heart, the tender leaves left intact. It looked beautiful and I plan to make it as soon as I can. I love the simple presentations.

Is anyone familiar with this chef/restaurant owner from Birmingham, Alabama, and the above mentioned book?

Karen, I'm not familiar with the cookbook you mention but find myself in the same predicament as you.
In fact, last year we put our house on the market to sell furnished and when we moved our personal items in the new place, I decided to leave about half of my cookbooks in the pantry over there for the new owners (whomever they may be--if ever they may be!) Most of them are the spiral bound Junior League type cookbooks with oodles of recipes for casseroles that don't represent my cooking style. But I'm finding that I hardly ever use my cookbooks anymore anyway since I get most of my recipes (or starting off ideas) on line.

You spelled Pimento cheese wrong, by the way. It's 'Minna cheese. Remember, I spend a lot of time in the south! :D

When we moved from Maine to here back in '05 we donated 250 cookbooks to our library. The shelved about 12 of them, and put the rest in their book sale. They were sold out in four hours. People love to buy cook books, especially when they're cheap!
