Seeking Stuffed Pork Chop Recipe

OK, I have some non-industrially raised pork and suddenly am craving stuffed pork chops. Anyone have a recipe to share? Please note, that 'winger don't do complicated or fussy.

well, just use your favorite non- fussy turkey stuffing recipe. make a pocket. braising works well - some liquid (wine and stock perhaps) simmered with a tight cover.

The last time I stuffed pork chops, I sauteed some shallots, criminis and garlic and added it to a mixture of dried cranberries, pecans, sourdough bread cubes, and chevre. I used chicken stock for some moisture.

It was neither complicated or fussy, but very delicious.

Here's one I used to do, but it's been a long time.
Take a double thick chop, cut a pocket in it.

Into the pocket, place a "packet" consisting of a slice of mozzarella wrapped with a piece of proscuitto. I used to sew the pocket up with needle and thread; you can try securing it with toothpicks for a less fussy effort.
Then dip in seasoned egg mixture (salt, pepper, fresh chopped parsley), then in bread crumbs, seasoned how you like them. (I mix in grated romano cheese)
Pre heat your oven, and get a frypan hot on the stovetop. Add some oil to the frypan, brown the chop nicely on both sides, then go to the oven with it, and finish in there.

You can make a brown butter sauce for them while they cook, or you can serve without sauce. The mozzarella gets all ooozy. It's a pretty tasty dish.
