The idea sounds good to me, so far I've heard of Bacon Fudge, Cupcakes, Chocolate Truffles, Baklava, but only as long as the bacon is crispy. If it lost its crunch, as bacon tends to do when in contact with liquid, not so good.

Okay it's now a "craze" and a hot item on menus, but if you think about it, many of us have been eating waffles or pancakes with bacon or sausages and maple syrup & other flavor syrups for years.
I think this may be a case of what goes around comes around...and maybe just a way to market new products!

Bacon goes well with sweet. We made a batch of bacon almond brittle this year to rave reviews. I say bring it.

Is this why fried chicken and waffles are a famous combo in some parts, then? I've never understood the pairing, but in relationship to the points this article makes about salty/sweet/fried it makes some sense.

Jenise, it goes back a long way if food historians are to be believed, starting right after Thomas Jefferson brought a waffle iron back from Europe.
then became part of "soul food", E.G. Roscoe's Chicken and Waffles resto established in Hollywood for years.
