I'll be teaching a class this weekend at Kookoolan Farms. On curing and smoking. I'll do bacon and capicola for sure. Haven't decided on the third item yet.

I am so sorry I will be out of town this weekend, Chef. I would have made the trip to Oregon just to spend the day with you :wink: Let me know when you will again be in the area, please. Good luck with your students.

Yeah, well a little problem developed. I wanted to show the students Ruhlman's book, Charcuterie, but I can't get at all my books right now. Amazon is out of it.

Got in touch with him and he agreed to overnight a copy to me.

Coulda loaned you mine. :) It would seem this book is somewhat responsible for the new surge in house-cured meats in so many restaurants these days--a good, I think.

Ruhlman just contacted me and told me he's out of the books. Won't have any more copies until next week and he's on the road all week. Apologized profusely. Pretty sure I could have sold a couple of dozen for him. Oh, well...

Class went well, I thought. I showed them two different bacon cures, a brine and a dry cure. Then we did corned beef - brine - and pastrami. I wrapped up with smoked pork shoulder - with a dry rub, naturally, and barbecue sauce.

Two folks in the class had copies of Charcuterie.

Seems like it was available everywhere, to everyone - except Ruhlman and me.

Definition of Name Dropping from Wiki...

Name dropping is used to position oneself within a social hierarchy. It is often used to create a sense of superiority by raising one's status. By implying (or directly asserting) a connection to people of high status, the name-dropper hopes to raise his or her own social status to a level closer to that of those whose names he or she has dropped, and thus elevate himself or herself above, or into, present company.

I do however drop people.

Joe Perry probably does not even want to post here any more because you gave him so much grief. I've taken plenty of guff on both the classic FLDG as well as the current incarnation and I never resort to replying like a little sorority girl.
