Figured we'd hit ths store today to find the ingredients we needed to make our fave oxtail recipe with the 4 kg. of thawing oxtails in the sink.

Got up, and white-out! SWMBO unaccountably reluctant to hike to the store and back (she hiked farther than that yestarday fro 'fun').

Can't even find my thyme or rosemary bushes under the new snow and don't happen to have a couple of large tins of tomatos in the larder, so am making do with the ingredients at hand even though I hate using dried herbs when fresh (should be) can be had.

Wish me luck. If it isn't up to the usual standard, I have an extra bottle of wine standing by - my only decision is whether to open the one with 'Cailloux' or 'Caillou' n the label!

Bill, we're getting tired of it already too. Monday morning lamb shanks are going into the slow pot. We do have the tomatoes on hand!

Oh how I wish Len would eat oxtails. In fact, just today, they had some gorgeous ones at Costco. I was so tempted. Mom used to make them all the time. (We called them "skinny bones" when we were kids. Not sure where that came from.)

Glad to say no snow here but plenty of oxtails! I'm doing them in the slow cooker for the first time over 2 days. Today roasted the oxtails before putting them in the crock pot with all the aromatics, wine and broth and cooked them on 'low' for just over 4 hours, then let it cool and put the pot in the fridge so we can scrape off the layer of fat tomorrow.
Then I'm going to roast the veggies, and am using turnips, onions, leeks a fennel bulb and celery and add them to the crock pot and cook them maybe another 2.5 to 3 hours, will be tasting along the way to see when it's done.
I think roasting the bones & veggies will add some depth to the taste, will find out tomorrow!

Fennel will certainly add a nice element to them.

We really should cool this and skim it before eating, but we have never yet been able to resist just digging in after smelling it for several hours!
