What's in your Fridge/Freezer?

I have remarkably little in my fridge (for a chef). Various sauces old herbs, Parmesan cheese(moldy), sushi vinegar (my own recipe), two containers of moldy black beans, tortillas for my son's tacos, and my special ingredient for my famous Kung Pao "Chicken":

My freezer has 1 gallon of duck stock, 1 quart of mole, 1 quart of demi glace, 2 quarts of pheasant stock, 70# venison (various cuts and grind), some ancient bananas, and 1 ball of frozen pizza dough (homemade):

One of my cats likes to crawl into the dishwasher. Another one took a 30 minute ride in the clothes dryer - pooped all over the clothes.

Interesting question, Cowboy!

In the freezer we have a stupid amount of flour (bread, wholemeal, rye, spelt, pizza), frozen fruits and vegetables, bread, a pizza base, frozen meats, some stocks, some lentils and herbs and spices. The fridge has the usual (milk, butter, cheese, eggs), lots of homemade jams and pickles, fresh vegetables, legumes and pasta.

Oh Gosh Robert...we have 2 fridge and freezers and they are always packed with stuff. I have been trying to clean it all out since Christmas but it's taking forever!

Right now, I have leftover spiral ham, leftover Chinese food, tons of cheese (American, sharp cheddar, gorgonzola, brie, Humboldt Fog, Swiss, Provolone, String cheese, Monterary Jack, Medium Cheddar, Shredded cheddar, ricotta, grated Parm, cheese sauce, and soy cheese). I have Prime rib bones, Whole milk, heavy cream, half-n-half, sour cream, cream cheese, soy butter, soy yogurts, eggs, Orange Juice, Cranberry juice, beer, soda, bottled water, rice pasta, cooked spaghetti, steamed broccoli, roasted cauliflower, homemade chicken soup, raw broccoli, Brussells sprouts, celery, carrots, mushrooms, peapods, potatoes (all kinds), 2 red onions, garlic cloves, mixed greens, Romaine lettuce, a hot house cucumber, mandarin oranges segments, various nuts, wheat and white and corn tortillas, turkey cold cuts, smoked salmon, bacon, rice bread, wheat bread, wheat pitas, hot dog buns, hamburger buns, tons and tons of condiments, pickles, breakfast cereals, cookies, bluberries, grapes, lemons, brown rice, black beans, tomato sauce, homemade hummus, and more!

Freezer has a few pork tenderloins, some chuck, rice waffles, wheat waffles, rice tortillas, 2 kinds of fish sticks, frozen veggies (corn, spinach, peas, onions, green beans), coffee, puff pastry, pie crusts, klondike bars, popsicles, steaks, pork chops, sausages, hamburgers, turkey burgers, hot dogs, ground beef, rolls, croutons, ice cubes, rice bread loaves, tater tots, french fries, sausage rolls, spinach and cheese in puffed pastry, marinade for salmon, raw shrimp, bananas, egg whites, leftover chicken, butter, split pea soup, and all kinds of homemade mini muffins.

Great question. Made me go look. In my old reliable stand-up freezer in the garage I have about 30 lbs blackberries (waiting to be used to make port), about 5 lbs butter (time to start looking for the next sale -- I need at least 20 lbs to feel secure), about 15 cans frozen lemonade (I use to sweeten large quantities of sweet teas for Sunday dinners), a fresh ham pork roast, a few steaks, some pork chops, a couple chickens. In the fridge, 6 cups assorted yogurt, condiments of various kinds (mostly spicy -- Indian, Thai, Caribbean). I've got leftovers from Sunday dinner and a few odds and ends from impromptu meals throughout the week (including carryout). Definitely time to clean! The vegetable bins are full of stockpot and stewing ingredients. The freezer section has about 4 qts pho stock, two ham bones (shank end), sausages of various kinds (need to get more boudin), about 6 2Tbsp pks of individually wrapped tomato paste, frozen okra, corn, green beans, turkey and stock from Thanksgiving (waiting to be made into pot pies), 1/2 gal French Vanilla Ice Cream.

I suspect that the furry item on the bottom shelf is why there is so little in the fridge :lol:

Very little in our small freezer - just some pheasant legs awaiting a leisurely stewing. I'm not a great fan of freezing and we've got enough good local shops to buy good fresh stuff regularly.

The fridge is generally too full of all manner of things. At least I've stopped the brains of the operation putting bread in there (claiming it's normal in Oz/NZ :? )

Freezer: stuff from the summer garden - tomatoes processed into marinara; blanched chard/kale/endive; blanched roman beans. Stuff to make stocks - chicken wings/feet/neck/backs; beef bones, veal bones, ham bones ; Reggiano rinds ; pancetta; instant yeast; already made ragu Bolognese and bean soups in serving sized containers, baby peas.
Fridge: milks - whole/skim/buttermilk/heavy cream and 50-50; eggs, salted and unsalted butter, green onions,bib lettuce,baby spinach, carrots, celery; containers of bacon drippings and chicken schmalz; assorted cheeses - parm, romano, Boucheron, Beemster, cabrales, stelvio; fresh Italian sausage; leftover standing rib roast

Bread in the freezer, yes. Bread in the fridge, no. Apparently bread is fine to freeze, but goes stale faster if you put it in the fridge. Before you ask, I have no idea why that is. ;)

Fridge: truffles :D ; 15 quarts of excellent vegetable stock awaiting freezing; heavy cream; 1# raclette; 1 mini wheel of Humboldt Fog; 1/2 # St. Nectaire; aged provolone; whole milk mozzarella; Parmesan; about 2-1/2 # aged cheese from the Gethsemani Trappists; Halloumi; gruyere; sharp cheddar; Myzithra; diet soda (3 kinds); apple cider; corn and flour tortillas; unsalted butter; eggs; spinach; lemongrass; Thai chiles; galangal; garbanzos; ginger; excellent leftover minestrone made with the excellent stock; 3 pieces of Trappist Bourbon Fudge; apples (Granny Smith and Braeburn); lemons; limes; cranberries; 2 bottles of Gruet Brut; 1 bottle of Smith-Madrone Chardonnay; various hot sauces and Asian condiments. Maria, how much of that stuff could be cooked on a Kamado? I did about 8.5 pounds of ribeye roast on mine Christmas day, along with a baked potatoe one for everyone...7 in all.

Robert your special ingredient cracked me up.

Maria, I wish you lived next door to me. "Knock-knock--hi Maria, I'm fresh out of soy yogurt for a banana bread recipe, do you have any?" "Ring-ring--Maria, hi it's Carrie, I have this wicked cold. Do you happen to have any homemade chicken soup?" ha. Seriously, you are stocked to the gills! Good for you.

Quick look into my fridge shows the following:
Eggs, skim mik, whole milk, half and half, cream, cream cheese, cheddar and parmesan cheese (do you see a theme here?)
Ham to give the dogs their pills, leftover chicken tomatillo pie (can't wait to have that for lunch), blueberries, salad fixins: baby lettuces, half of a mayan sweet onion, hot house cuke, celery, radishes
Too many condiments to name including two home-made salad dressings, maple syrup, three nut oils, truffle oil and cocktail sauce. Diet coke and quarter of a bottle of Chardonnay.

My freezer mainly contains: Vanilla, and peppermint stick ice cream leftover from Christmas dessert (it's rare we have ice cream onhand), veal chops, NY strip steaks, tri-tip, half of a brisket, zip lock bags full of stock: lamb, lobster and chicken. Several rinds of Parm-Regg. What am I to do with these besides putting them into a sauce or soup??

This was a great exercise because I learned I'm out of butter--potential crisis averted!

We had a friend over recently who hadn't seen the fridge we bought a few months ago. She walked up to it and said, "Oh this is the new refrigerator!". Then she opened the door and said, "And it's so FULL!"

Right now, I think we have leftover beef cheeks, leftover cauliflower gratin, tortillas, sour cream, a drawer full of cheeses (many of which are still edible), a drawer full of vegetables, bag of limes, 5 different milk variants, two dozen eggs, four lbs of butter, 3 lbs of Jimmy Hoffa, the Holy Grail, bitters (peach, orange, grapefruit, and Angostura), maraschino cherries, Maraska cherries, horseradish, Chinotti, Lillet, a piece of the true cross, some leftover riesling, cream with jasmine tea steeping in it, the list just goes on and on.....

two freezers and two refers here, well stocked...hate running to the store for stuff when i want to make something. plus we never know what kid or grandkid might blow in. i also enjoy helping out a neighbor now and then.

About a year ago, we bought one of those chest freezers, to keep out in the garage. With all the samples I get from work, plus bringing breads and other provisions back from the old country, and Cindy's baking, our primary freezer was packed to the gills.

So, I developed a system where we would have a complete, running inventory of everything in the chest freezer, taped to the top. When one of us added or removed an item, we would note that on the inventory sheet. Following this procedure, we would always know, right down to the last container, what was in the freezer.

Lasted about fifteen minutes.

Now I have no earthly idea what the hell is in there.
