RCP: Curried Shortbread

Made this tonight for a little something to tide us over until dinner is ready. The recipe was given to me by my friend Lyn Belisle.

Curried Shortbread

3/4 cup butter -- at room temperature
2 tablespoon sugar
1 teaspoon salt
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground turmeric
1/4 teaspoon cayenne
1-1/4 cup flour -- plus more for rolling

1. In a large bowl, beat butter and sugar until light and fluffy. Add salt, curry powder, cumin, black pepper, turmeric, and cayenne. Beat until well combined. Scrape down mixer and sides of bowl. Beat in flour until well combined.

2. Turn dough out onto a large piece of waxed paper on a flat surface. Using a lightly floured rolling pin, roll dough into a 2-in.-wide log about 12 in. long. Wrap in waxed paper and chill until firm, at least 1 hour and up to 2 days.

3. Preheat oven to 325° and set oven rack in middle position. Cut dough into 1/4-in.-thick slices. Lay slices at least 1/2 in. apart on baking sheets. Bake in batches on middle rack until set but not brown, about 12 minutes. Cool on wire racks.

I didn't have cayenne, so I used chile de arbol powder.

I'm not sure Stuart liked them though. 8)

We had this before some Indonesian-style green beans with coconut. Not exactly wine-appropriate. I had a diet root beer. :mrgreen:

For a snack, these would be great with a fruity sparkler like Gloria Ferrer Blanc de Noirs.

Oh yum, Cynthia. We've been on a curry kick lately. Last night's dinner was a Thai-style green curry with chicken legs, cold marinated fresh cauliflower and naan that we drank with a lightly offdry Provencal rose. And tonight's going to be Indian-ish, too: Masala roti stuffed with curried ground beef and green bell peppers and rolled up with a chiffonade of cold romaine--kind of like an Indian burrito. We've got to make cookies so the simple dinner that can be eaten standing up and not needing a knife and fork will be perfect.

It does sound perfect, Jenise! This nasty cold weather has me craving hot/spicy things and hot/comforting things. I think I'm going to make a vegetable and wild rice soup for lunch and stir in some chile garlic paste.

Looks fabulous, Cynthia. Like you and Jenise, this cold weather has me craving comfort foods. I've made soups for the past 3 weeks. Sunday's was a pleasing spinach and feta cheese dressed with croutons and pine nuts. YUM! Curry is always good. Think I'll do something with a little heat for tonight's supper. Thx for the inspiration. :P
