I love it when this happens

Last night I had two couples to dinner who are going to be helping me with a project in a few weeks, and this was my way of thanking them in advance as well as discussing my ideas about how best to get the job done. The menu was a small plates progression of four courses of which the first was white asparagus spears with scallop ceviche. Apparently, my style of cooking and choices of ingredients is vastly different from their normal experience, and the ladies were atwitter as I set about creating the plates with the lion's share of their 'interest' being those scallops. The asparagus had been dressed with lime juice and white truffle oil, and the scallops had both but also a few drops of sesame oil, black sesame seed and slivered green onions. That lime juice 'cooks' seafood with acidity and not heat was obviously of great concern--one of ladies actually knew about ceviche but hadn't eaten it while the other had never heard the word. Neither eats sushi. Neither, I presume, did their husbands--these are both long and successful marriages, the kind where by this time you like or don't like all the same things.

Bravely though, neither admitted any of that until after dinner. Because both had separately taken one look at what I was preparing and immediately began trying to talk themselves into eating one bite before politely pushing the scallops away as they knew they would have to do. For different reasons, both hated scallops and weren't buying this 'cooking with acid' thing one little bit.

Well, they LOVED it. Both of them. And they couldn't get over it! It was just about all they talked about through the rest of the meal when they weren't asking suspicious questions like "I'll bet you don't buy Velveeta, do you?" :)

What a great story!

I've had some fun adventures here getting people to try things outside of their comfort zone. It's really satisfying.

I'll have the same challenge next week. I want to reward my research group for some above-and-beyond stuff they've done for me. The concept of chile and chocolate has my staff dubious ("mole" is a foreign concept here), but I'm going to challenge them with Cynthia's Brownies of Death. If they choke and run out of the room, I'll have to dig out some wine instead. But I think that at least two of them will like it.

Yeah, this kind of thing is always fun. The scallop ceviche I prepared for my guests in August had the same effect. They loved it. I really need to get back into entertaining more often. Thanks for the inspiration. :wink:

That is a fantastic story, Jenise. Expanding people's food horizons is indeed a great thing to do. Thank goodness you are such a wiz in the kitchen. They've probably been subjected to other people trying to introduce them to something new with less than stellar results, thereby increasing their suspicion level. You've scored a major achievement.

Stuart, it's not "rewarding people" if they choke and run out of the room. (I don't think Brownies of Death qualify as the same kind of dining expansion experience. People either like/can take heat or not.)

I think the notion of heat and sweet is very foreign to most people. The first time I had a mole, it was pure sensory/cognitive dissonance, but it opened my eyes to a realm of new flavor combinations.

I did warn the Serbian fellow in advance- he's very curious, and he knows that if he yells, "NAPASI MI SE MUDA!" AT ME, I understand what it means. :mrgreen:

Jean and I, back in our younger and more naïve days, prepared and served a scallop ceviche to her family during a family reunion in the Outer Banks. One brave nephew tried it, but the rest wouldn't get near it. The sad thing is that all the nay-sayers live within 50 mi of the ocean, unlike us :cry:

Well, thing is, I never set out to convert anyone, at least not people I barely know or from this kind of objection. There are the usual likes/dislikes most of us have, reasonable or not, and then there are lines some people don't cross. Raw meats and seafoods are definitely among the latter category of issue and I respect that. But it was a last minute decision I didn't enough thought to. Originally, the asparagus was going to be a soup and the scallops a seared garnish. But the asparagus was so plump and pretty I couldn't make myself do it so an hour before dinner, I changed my mind without giving the matter proper review. Not smart!

I was watching Anthony Bourdain in Japan awhile ago and they ate chicken sushi. I don't balk at many things, but that one gave me pause.....

I saw that one! Had to rerun the tape to make sure I heard correctly. I have never ever heard of anyone eating raw poultry before.

Isn't that that truth? People do start liking the same things, I think because they usually compromise toward one or the other's tastes until they eventually, as you say, like or don't like all the same things. Great observation.
