Recipes for Left Over Turkey?

So in a spate of cross-border fellow feeling, SWMBO and I decided that there was no reason turkeys should be restricted to hoidays. So we are cooking a bird today, just because.

I thought I'd get a leg up on the aftermath and ask people if they had any favourite recipes for using leftover turkey. Turkey a la king, turkey surprise, especially turkey soups....I figured the Americans woud be starting to think about this soon, and some might post their faves......

Do you have all the trimmings? The last time I made turkey I made a Shepard's Pie.

Use a deep dish pie pan. Put a layer of dressing, then a layer of turkey. Pour gravy over. Then a layer of veggies, whatever you have. I used sweet potatoes and corn. Lastly, a layer of mashed potatoes. Heat through in a 350 F oven. Serve with gravy poured over.

It was good.

The first night after we like "more of the same." So we put dressing in the bottom of a glass pie pan, cover with sliced turkey, then gravy. Cover with aluminum foil and heat in the oven. Serve with leftover or fresh veggies or a salad.

I'm singing out for... Turkey Tetrazzini:
- In a pan, saute a big bunch of sliced mushrooms, and any other vegs you like -- cut on the small side -- and add chunks/shreds of turkey at the end.
- In a pot, make a roux, build the sauce with chicken stock, then cream, then a few egg yolks, then grated parmesan.
- In another pot, boil some spaghetti.
- Throw 'em all in a casserole, top with cheese/crumbs, and bake.

Make sure to splash some marsala into the saute.

Thanks for the ideas, everyone.

We decided to start off by making a big pot of turkey soup. Well, it was intended to be soup until SWMBO was asked to put some rice into it and came up with a cup or more of Arborio rice that she tossed in.

What had begun as a rather normal soup with lots of water, quickly turned into a turkey rice stew with precious little water indeed. I don't know if Arborio actually absorbs more water/stock than normal rice, but I do know that it ate my soup.

The turkey stew was great.....

Still pondering other recipes for the rest of the meat, but of course if I ponder long enough it may all turn into delicious turkey sadnwiches and solve the 'problem' without me coming to any conclusion.

How about making Hot Browns with the leftover meat?

Sprinkle with additional Parmesan Cheese and paprika. Bake in a 350 1/2 degree oven until golden brown. Remove from oven and cross two pieces of bacon on top of each serving. Garnish with parsley. Serves 6.

I'd love to try this but my oven does not have settings to allow 0.5 degree precision.

i good with the tetrazini thing; but i cook the picked over carcas with the usual stuff for several hours to make turkey stock instead of using chicken. it usually makes enough stock to also make a cream of turkey soup with wild rice, carrots, celery, onion etc. and use more than a little madeira or dry sherry with the tetrazinin!

So a hot brown is actually a strata? Never had one, never knew, though I know it's a Louisville classic. After reading the ingredients, I think another name for it could be Cholesterol Speedball. Those tomato wedges can't fool me....

Okay...I'd be inclined to make a turkey just to make some Hot Browns. Dang that sounds good!

Not only does the oven temperature have to be exactly 350 1/2 degrees but you must be at precisely 62.891 feet above sea level. I can't believe I left that crucial detail out.

I made a nice turkey curry for dinner last night. I used turkey stock as well. It was pretty good.

Yeah, turkey curry is a natural.

I think SWMBO has gone off on a tangent and I am suffering from Soupus Interuptus - I saw a book open to a split pea soup rather than another turkely recipe, so I may have to take matters in hand and do a curry myself. Thanks for the suggestion.

Sorry to not be contributing to the end of your plight, Bill, but reheated meat, unless the original preparation was a braise or stew, doesn't taste 'right' to me so all leftovers get eaten cold.
