I was making my version of Curried Chicken /w rice this last weekend. It dawned on me that when we had this dish in Jamaica the chicken thighs that they used the bone was broken. Wondering if this would make the dish taste any different I decided to break the bones before making the dish. It turn out excellent but not having a dish made without the broken bones to do a side by side comparison I couldn't tell if it made a difference. Anyone have any thoughts on this?

Bart, I've never tried this, but it sounds like a Jamaican country-style trick aimed at a richer flavor and texture by letting collagen, blood and marrow out of the bone to permeate the chicken and, perhaps, the sauce it's cooked in.

Bart, I agree with Robin about why one might wish to do this. Probably a little more flavor, but it would be in the single digit percents on a dish as complex as a Jamaican curried chicken and possibly not worth the loss of whole pieces.
