Mediterranean Diet/Trip

If you were to take a trip to the Mediterranean with the idea of seeing some beautiful country, friendly locals, eating fresh, well prepared foods, visiting farmer's markets with the idea of cooking your dinner most nights and enjoying a relaxing way of life...where would you choose to go?
