Sweet Potato Pie

Any recipes out there ?? Would like to have for Thanksgiving.

Loved the weekly streetside barbecue and sweet potato pie on Germantown Ave in Philadelphia decades ago....not sure if its still done but it was a real treat.

Sweet Potato Pie

3 medium sweet potatoes
2 eggs
1 cup sugar
1 cup evaporated milk
6 tablespoons melted margarine
½ teaspoon cinnamon
¼ teaspoon each allspice and nutmeg
1/8 teaspoon ginger
1 unbaked 9-inch pie shell

Cook sweet potatoes in water to cover in saucepan until tender; drain. Peel and mash sweet potatoes. Combine eggs, sugar, evaporated milk, margarine, cinnamon, allspice, nutmeg and ginger in bowl; mix well. Add sweet potatoes; mix well. Spoon into pie shell. Bake at 350 degrees for 45 minutes or until knife inserted in center comes out clean.

That recipe looks good!

Linda, can you guestimate on # cups for those sweet potatoes? I have a couple of ginormous ones to use up, but I'm not sure how much to use.

How to Measure Amounts of Sweet Potatoes for Sweet Potato Recipes


Just to get it straight, one medium sweet potato is equivalent to one cup of canned sweet potatoes when you are making a sweet potato recipe. Canned sweet potatoes are also already cooked, too.
