Smoked Cornish Hen question

We were just given a home-smoked, vacuum wrapped cornish game hen (maybe 1.5 lbs) It appears to be fully cooked. What would you do with this? I'm disinclined to just cut it up and nosh on it. There must be something interesting to do with it. I'm considering putting it into a white bean stew, sort of like a cassoulet, but that seems a little boring. Any good ideas out there? Thanks in advance.

I've never had a smoked cornish hen, but I make split pea soup from the leftovers of smoked turkey (follow directions on dried peas, substituting the smoked turkey for ham bone).

They are very small, so one night when you and a favorite person want to just watch a movie and drink wine, why not cut it up. Legs, thighs, breast meat, wings (discard the tip), put it on a platter with, cheeses, olives, assorted crackers and some smoked salmon. Viola! Light some candles, and start the movie. Later in the evening, pull some home made Tiramisu out of the freezer, pour a great cup of coffee and enjoy!

Karen, that sounds good! Could also make quesadillas with the meat, shredded cheese, jalapenos, and some chopped, fresh coriander. Cook them lightly in olive oil and then spread some sour cream on top.
Drink no wine before its time. It's time!
