Prickly Pear jelly

As today is Veteran's Day and thus a holiday for bank employees (we're closed when the Federal Reserve is), I took yesterday as a vacation day, and used the time home and alone to make some jelly out of the stash of prickly pears that have been in the freezer since last October's trip to Black Mesa. It's been about 10 years or more since I have made jelly of any kind, but after turning the fruits into juice yeaterday and adding some apple juice for a boost of pectin, I gave it a try today. Results are good, I have 12 pints and 8 half-pints of jelly that is actually jelling. WooHoo! The hardest part turned out to be trying to find canning jars in this misbegotten city.

I would gladly send you two empties, for one full? :roll: I can not remember the last time I ate prickly pear jelly, but I do remember it is good. I know too that I occasionally see the fruit in stores here in Kentucky.

Known as Sabra cactus here in Israel, prickly pear jelly is quite popular but even more popular are the fruits - served well chilled, peeled carefully (the little spines tend to be nasty in the fingers) , long considered a treat here and throughout Palestine.

Also popular, Sabra flavored creme brulee.
