Kohlrabi?

by Dale Williams » Fri Nov 07, 2008 4:42 pm

So my turn to cook tonight. I've got monkfish and asparagus, and I bought some kohlrabi (because it looked good). Only problem is I've never cooked kohlrabi in my life. I'm thinking either combined with carrots and mashed, or maybe a braise? Any simple ideas? I leave the complex cooking to my wife, but any ideas appreciated.

The last time I had Kohlrabi I julienned that with some jicama and carrots and then served them over a bowl of greens with a splash of lemongrass ginger oil, some fresh basil and topped with some shredded manchego cheese.

I like it better raw than cooked but briefly sauteed is nice as well.

We were plagued with a surfeit of kohlrabi from our CSA several years back. Tireless experimentation led us to the conclusion that it's best uses were raw, shredded or julienned, in salads, etc.

thanks guys. I found a braising method I'm using tonight, but will try the raw next (I like the jicama idea)

Slice thin, sprinkle a little salt and open a beer!

Thanks in advance for the info, Mark and Dave. I am pretty sure our CSA box will have kohlrabi in it in the near future and I had no idea of what to do with the stuff.
