I love cooked celery and I love Greek dishes because they all seem to use lemon ... here's a quck recipe for Greek stew that will satisfy your craving for cooked celery ...
3 pounds Boneless pork, cut into 1-inch chunks
4 pounds Fresh celery with leaves
2 medium Sweet yellow onions, finely chopped
3/4 C Olive oil
1/4 C Freshly squeezed lemon juice
1 T Salt
1/2 t Black pepper
3 to 4 C Water
Trim the base and very ends of each individual rib of celery, then wash ... cut ribs in half lengthwise and then cut into 2-inch pieces ... transfer to a saucepan with ice water to cover, bring to a boil, and cook for 10 minutes ... drain and set aside ... in a stew pot, saute the onion in the olive oil ... when the onion is soft, add the pork and 3 cups of water ... bring to a boil, cover, and cook over medium heat for 45 minutes ... add the celery, salt, and pepper, reduce the heat, and simmer for 25 minutes ... do not stir the pot but rather shake gently from time to time to prevent the meat from sticking ... add the lemon juice and shake the pot gently again ... turn off heat, cover, and let sit for 10 minutes before serving ... if more liquid is needed, add up to a cup of boiling water ...
