RCP: Lemon Sandwiches

Try these with your next platter of oysters on the halfshell or with smoked salmon ...

6 Thin slices dense wheat bread or any other dense bread
4 T unsalted butter, at room temperature
1 Whole fresh lemon, thinly sliced into cartwheels with seeds removed
Salt and freshly ground black pepper to taste

Generously butter the bread ... cover half of the bread slices with the lemon cartwheel slices ... season with salt and pepper to taste ... cover with the remaining buttered slices ... cut into quarters ...

Makes 24 sandwiches

Open a bottle of crisp chenin blanc and you'll be in heaven !

I can't imagine lemon sandwiches...but then my mom and friends could not understand how I could eat mustard sandwiches as a kid. I think I could eat roasted lemon sandwiches!

Similar idea:
On one plate - slices of smoked salmon
On a second plate - small slices of buttered brown bread
A third plate - very finely chopped raw white onion
A fourth plate - lemon, sliced wafer-thin, the "rounds" sliced into quarters.
A grinder charged up with black pepper
Build your bite sized open sandwich according to taste.

I once made 'lemon pizza' with a 'jam' of meyer lemons that I cooked down, peels and all.

It was a bit intense and some of the more acid-sensitive of my guests had difficulty.

I never repeated the experiment.

You bet I will.....I usually do try your recipes...lemons are my favorite ingredient. Now that I have the best lemon tree in the world, I will wait for the perfect one to ripen (which will be 99.99% of them) and give it a shot.
