I think I am going to marinade, quickly flash on the broiler/BBQ and then stuff with a crab and red pepper cream cheese mix. Flashing in the oven should do the trick!
Any variations welcome forumites.

I scoop out the gills, marinate in salt, pepper, garlic, olive oil, and balsamic, then grill. After grilling, I slice it and use it on top of an arugula salad.

My fave is simple. dress the underside with truffle oil and finely chopped garlic, top with grated Parmesan and broil until the cheese melts and the 'shroom is hot. Sprinkle with black pepper and chopped parsley.

If you use a large mushroom, one makes a course for one person and mates very well with many wines, including Chiantis and Barberas.
