I had a fella in to do this as a demo for all the chefs when I was president of the local chapter of the American Culinary Federation.

Back in the early 1980s there was a Chinese food magazine called "Wok Talk". One of the articles was on the dragon whisker noodles, including a recipe for the dough and description of the technique. Several readers later sent in photos of their attempts to duplicate the feat. It definitely requires a lot of practice to get it right (I've never tried it myself).

I actuallly tried it and no less under the tutelage of a good Japanese cook. The mess I made was glorious. Noodles? Sheesh....she made them after cleaning up my mess.
