Question for Chef Carey and others!

by Bob Parsons Alberta » Fri Oct 03, 2008 9:35 am

On a menu, what is a slider? Article today in newspaper talks about "Kobe meatball sliders" and a menu I saw yesterday mentions "Primerib sliders...mini burgers topped with etc".

A slider is a small, greasy, square hamburger. The term is famously used to describe the output of White Castle.

OK, but do not understand reference to White Castle? Is that a restaurant chain?

Sorry about that! It's a fast-food chain. Started in Chicago, I believe, and is available nationwide. See http://www.whitecastle.com/

I've had a few, usually after drinking. White Castle was started in Wichita, KS: http://en.wikipedia.org/wiki/White_Castle_(restaurant)

Yeah, White Castle invented the small, square burger.

There is also a chain in the southern United States that attempts to approximate the White Castle gut bombs - Krystal. They have about 450 units. The largest is on Bourbon Street in New Orleans.

White Castles are better.

Jeff Grossman/NYC wrote: available nationwide.

The physical restaurants, however, are limited to the Rustbelt. From Wikipedia

White Castle can be found in the following states in the United States:
Illinois
Indiana
Kentucky
Michigan
Minnesota
Missouri
New Jersey
New York
Ohio
Tennessee
Wisconsin

It's interesting to note that Krystal, which is quite similar, is limited to the South and only barely overlaps White Castle territory in Tennessee (and tecnically in Kentucky, although Krystal is only found in a few small cities in the southern edge of Kentucky where there are no White Castles.)

Thanks for all the adjustments, folks. I didn't have the time to hit wikipedia and just answered Bob off the top of my head.

Re Bob Parsons reference to Kobe beef and prime rib sliders, I think the answer is that the 21st century "slider" has been completely redefined by a lot of restos and is no longer the White Castle creation or even similar.
It looks like the "slider" today has more to do with sliding it down your gullet than anything that resembles a square burger and is made with all sorts of ingredients. Epicurious for example ahs recs for a meat ball slider made with 3 kinds of meat and for a Bombay/curry version made with turkey.
There used to be White Castles in California, guess they're all gone.

Since we're on the subject, "sliders" or mini burgers are the hot, trendy thing right now in restaurants.
Upscale places are serving a basket of three or four, either on the starter menu, to be split by a table, or as a main.

While it is true that slider and White Castle will be forever connected, they've come a long way and today there are Angus Sliders, Prime Sliders, etc etc

My opinion of this trend is consistent with my opinion of most trends..........not much. Give me a big burger any day. That's the classic.

Hey, who needs White Castle? Now you can make sliders in your own home with this handy device (snicker):

God, that guy is awful! I just don't understand the business of selling things to people by shouting at them.
