Other than sandwiches and simply reheating, what do you do with Thanksgiving leftovers? I'm looking for a recipe.

I've found a Shepherd's Pie, but you are such great cooks I thought I'd ask here.

Here's some ideas for you, have done all of these at one time or another.
Turkey hash with hot biscuits and gravy
Turkey gumbo, lots of ways to play around with this.
The leftover turkey with sauteed mushrooms, shallots, cream and brandy.
A hot brown sandwich a la Louisville
Leftover turkey and stuffing casserole.
Turkey stew over potato cakes adapted from an Emeril rec
And you could always do turkey divan or A la King.

I stack up pot pies in the freezer and instruct my husband to cook one in my absence. HE loves these things!!! :mrgreen:

Eat them up as is! So much better than on the day of all that mess and work. One year I made a casserole with the stuffing on the bottom, gravy, then some cranberry sauce, topped with breast slices and tater tots on top with more gravey. It was a ghastly thing....our kids and grandkids inhaled it and my daughter-in-laws asked for the recipe. That was the year I added zuchinni to my stuffing, which was wonderful.
Turkey pot pies are great, but more work.
I usually make soup with the turkey, freeze in two serving containers, and I have that wonderful soup for lunches in my freezer during the winter.

Thank you all for the suggestions. I have enough turkey that I can try a couple of things.

But I think I'm the only person on the planet that doesn't like turkey soup. The broth doesn't taste good to me.

At least for now; wait until he spends more time in Montana. He'll be eating raw turkey, bones and all. Leftover won't even be a concept.

Turkey curry, similar to this recipe on the Tabasco site. Sometimes I roast a turkey just to be able to make curry.
